Refreshing Summertime Raspberry Mint Mojito Recipe

When summer heats up, there is nothing better than a refreshing summertime raspberry mint mojito. My spin on this popular beverage includes fresh raspberries, garden mint, and lime juice.

This refreshing berry mojito can be made with or without alcohol. I like to add a little rum to mine for hot summer evenings when relaxing on the garden patio. Raspberry Mint Mojito’s are a summertime favorite for the kids as well, minus the rum of course.

Fresh Ingredients are best for this recipe, in a pinch, you can use thawed frozen berries.

Fresh Mint
Lime Juice
Sugar
Rum (or leave out for kid’s version)
7-up or Sprite

If you are one of the garden lovers that has to have mint in your garden at all times, this is definitely the recipe for you. Homegrown mint is the perfect ingredient for these Mojitos. We have a dedicated garden box for mint in our backyard oasis. Make sure if you plan to grow it yourself, you have a way to keep it contained…… it loves to take over. Some people have a love / hate relationship with growing mint. But for me, it is one of my garden staples year after year, not only for making Mojitos, but adding to some awesome rice dishes and drying for year round tea.

When we lived in Washington State, we had a huge field of raspberries. They needed little care and we looked forward to harvesting them year after year. Here in the south, they are tricky to grow. To date I have officially killed off 3 raspberry bush starts. So organic, store bought raspberries are the way to go for our family…. for now.

Then comes the lime juice. In that area, we are blessed. Our lime tree is looking to have a bumper crop this year. Fresh lime juice is amazing right off the tree. Anything you can grow at home always tastes better and is more flavorful than storebought. In this recipe, you can substitute bottled or fresh limes from your local grocer.

Refreshing Summertime Raspberry Mint Mojito

Ingredients
  

  • 7-8 ea Fresh Raspberries
  • 8 leaves Mint
  • 1 oz Lime Juice
  • 1 tsp Sugar
  • 1 oz Rum (optional)
  • 1/2 Cup Ice
  • 1 can Soda- 7up or Sprite

Instructions
 

  • Add raspberries, mint & lime Juice to a tall glass.
  • Muddle indgredients together with a muddler or the back of a spatula until combined and the rasberries are mushed.
  • Add Rum (Ommit if making a virgin version of this drink)
  • Add 1/2 cup Ice
  • Gently pour soda into glass.
  • Gently mix to combine.
  • Enjoy!
